It was a good day … Or a bad day based upon your perspective. A good day because I had fun going out for lunch in Manhattan and even got street parking! A bad day because by 2pm I’d blown through most of my Weight Watcher smart points for the day and still had a cupcake from Molly’s Cupcakes to which to look forward.
So what to do for dinner?

Ta da! I found this Roasted Pork Tenderloin recipe over on the Weight Watcher website and that along with some sautéed broccoli raab gave me a 3 smart point dinner!

Who knew you don’t need a carb with dinner? 😉

Ingredients

  • 2 pounds pork tenderloin
  • 2t olive oil
  • 4t dried herbs de Provence
  • 1t garlic powder
  • 1t onion powder
  • 1t salt
  • 1t freshly ground pepper

Directions

Preheat oven to 400.

Spray a shallow roasting pan with nonstick spray (I used a jelly roll pan).

Mix herbs, spices, salt and pepper in a small bowl. Rub oil over pork. Sprinkle herb mixture over tenderloin (I had a nice coating).

Roast in oven 25-30 minutes until a meat thermometer reads 145 degrees. Let rest before slicing. Serves 8 at a 3oz portion it’s 2 Weight Watchers smart points.


The only change I made from the original recipe was to use 4t herbs de Provence instead of their 2t thyme and 2t oregano.

It was easy and quick and I’ll definitely make it again. Oh and now I have all the left over meat to make a hash or toss into a salad during the week. Hope you like it as I did.
