Last night I made Fettuccine Alfredo from Cooking Light for dinner. Normally, I avoid these recipes because the serving size is only one cup. And when I read them, I think, “One cup, there’s no way that will satisfy me!”

But in the never ending quest to find new dishes the girls will like and knowing this one is packed with parmigiano reggiano cheese, I thought it was worth a try. I have to say, other than the phone ringing during the “constantly stirring” part (yeah, try to make this one-handed, not fun), it was pretty simple. The girls liked it (gave it make again status), and I thought it was pretty darn rich and delicious too. It was a whopping 9 Weight Watcher points, but what the heck. Oh, and too bulk mine up (not theirs), I steamed some broccoli and added it to the pasta at the end (the broccoli benefited from some of that Alfredo sauce). All and all a good dinner.

Oh and no pictures – sorry. I’m not very good at that food picture thing but promise to try and practice. You’re just going to have to trust me on this one.

Oh two other notes, I used skim milk instead of low fat (I didn’t check to see if it lowered the points) because I just didn’t feel like buying the 1% and next time I may try it with whole wheat fettuccine, just to see.
