My Mom used to be an excellent cook. I say used to be only because she chooses to no longer cook. I’m sure if she did cook again, she’d still be excellent.

Anyway, at some point, she gave me her recipe for lentil soup, which is so ridiculously easy, no one has an excuse for buying lentil soup in a can.

Ingredients

1 C  Lentils (regular brown kind)
4 1/2 C  Chicken broth, fat free
2 1/2 sprigs  parsley — snipped
1 bay leaf
14 ounces  tomato — crushed or diced (I use canned)
2 stalks  celery — chopped
2 sticks  carrot — sliced
1 onion — chopped
2 cloves  garlic
1 teaspoon  thyme (I’m pretty sure she used dried thyme b/c I can’t imagine her ever using fresh)

Directions

1. Throw everything into a pot. Bring to boil. Turn down and simmer  until vegetables are tender, 1 1/2 – 2 hours. Yep that’s it.

The ingredients all meet the simply filling guidelines of Weight Watchers but if you’re a point counter, if you divide into 4 servings, it’s 4ppv a serving, 6 servings, 3ppv.

    Hello again,

    I made the lentil soup in my crockpot, doubling all of the ingredients but using 1/2 stock and 1/2 water like the split pea.

    It turned out really good, but it took at least as long as the split pea (6 hrs) or maybe a little longer. I am not sure of the exact time because I started it one evening and then turned it back on the next day.

    Trader Joe’s has this South African Smoke seasoning, and I added some of that to it (don’t tell your Mom). It was good!

      Nancy, glad you liked it! Okay, so if I get a third wind, I’m going to set up some in my crockpot tonight to cook for our snowy day tomorrow.

    Nancy, funny you should ask because I was thinking of trying that out today or tomorrow. I’m sure it can be done, I just don’t know for how long. Plus my crock pot cooks hot, so that will affect the recipe. If you do it, let me know how it turns out, and if I do it, I’ll do the same.

    So glad you liked the pea soup recipe.
