Chocolate Espresso Mousse ShotsI found this recipe over on the Weight Watcher website. It’s a 2 point recipe but it called for making them in shot glasses. Unbelievable as it may seem, I don’t own 8 shot glasses (I should have checked with Becky first), so instead I used an assortmant of beer tasting glasses that we got at various beer festivals, doubling the quantities and the corresponding points (so instead of 16 shot glasses, I made 8 of mine). Also, I couldn’t find chocolate wafers at the supermarket, so I substituted thin oreo cookies. Enjoy.

Ingredients

  • 2 tsp instant espresso
  • 1T hot water
  • 1 box (1.4 oz), sugar-free, fat free instant chocolate pudding (I used chocolate fudge flavor)
  • 1 1/2C fat free milk
  • 1 1/2C fat free whipped topping (divided)
  • 11 Nabisco Oreo Thins, crumbled well

 

Directions

Dissolve the espresso in the hot water and let cool to room temperature.

In another bowl, wisk together the pudding mix and fat free milk until well blended. Wisk in the cooled espresso. Then fold in 1/2C of the whipped topping.

Line up the 8 glasses (mine were about 4oz size just for an idea), spoon 2T pudding into each one, top with 1T cookie pieces, then 3T pudding. Lastly, sprinkle the remaining cookie pieces among each.

Garnish each with 1-2T of the whipped topping.

We happened to have some chocolate covered espresso beans in the house, so we garnished each glass with one of those.

That’s it – easy peasy and each is 4 smart points.
